Our Vision

OM Taste began with a simple idea: that the most meaningful way to share culture is through experiences lived together. Cooking, speaking, learning, laughing—these are the moments where people truly connect. Long before a recipe is mastered or a sentence is spoken perfectly, something deeper happens: stories are exchanged, memories are created, and a sense of belonging takes shape.

The project grew from the idea of chef and educator Liam Sibillin, who was raised in a family where Italian food, language, and togetherness were part of everyday life. For Liam, teaching and cooking have always been two expressions of the same gesture: offering something that brings people closer. OM Taste was created from this belief, shaped by the desire to share a way of living that values simplicity, generosity, and community.

Griffith, with its strong Italian heritage and multicultural heart, became the natural home for this idea. Here, food and language are more than skills; they are threads that tie generations together. OM Taste reflects that spirit. It is a place where tradition meets curiosity, where people learn by doing—hands in the dough, voices in the room, everyone contributing something of their own.

Our approach is grounded in clarity, intention, and warmth. We teach in a way that feels human and accessible, we cook with respect for ingredients and stories, and we welcome people as if they were stepping into a family kitchen. Italian culture, for us, isn’t something to display from a distance. It’s something to live, share, and pass on.

OM Taste is our way of inviting the community into that experience—one class, one conversation, one shared moment at a time.

About Liam Sibillin

Liam Sibillin was born in Italy to an Italian father and an Australian mother, in a family whose story has always moved between continents. His grandparents lived in Australia before returning to Italy, where Liam was born, and the stories of their life abroad were part of his childhood. Through his mother and grandparents, he grew up hearing about Griffith — its people, its Italian roots, its warmth — until it became a place he felt connected to even before ever seeing it. When he eventually arrived in Australia, Griffith didn’t feel like a new destination; it felt like an extension of home, a place where the threads of his family’s past naturally met the life he was beginning to build.

Leaving home at a young age taught Liam what it means to start from scratch, to feel alone in a new place, and to discover how powerful it can be when someone offers support or simply makes you feel welcome. Those early experiences shaped the way he relates to people: with openness, curiosity, and a genuine appreciation for the small gestures that make someone feel they belong.

Over the years, Liam worked in restaurants where he developed a deep respect for food, for the discipline of the kitchen, and for the quiet creativity that comes from cooking with intention. Alongside this, he nurtured a lifelong love for nature and animals — especially tigers, whose strength and vulnerability have fascinated him since childhood. His interests have always been broad: food, wildlife, the natural world, and culture in all its forms. These passions continue to inspire him and shape ideas he hopes to explore in the future.

His Italian heritage has always been central to who he is — not only through food, but through language. Italian was the sound of home, of family stories, of identity. Teaching the language became a natural extension of his life, a way to share the culture he grew up with and the sense of belonging he found both in Italy and in Griffith.

Today, Liam brings together his mixed heritage, his years in the kitchen, his love for nature and animals, his passion for culture, and the experiences that shaped him when he first left home. OM Taste is one expression of that journey — a way for him to share connection, culture, and a sense of belonging with the community that now surrounds him.

Private functions

OM Taste also offers the possibility to organise small private events. These gatherings can take different forms — a private dinner, a cooking experience with friends, a special occasion, or a moment you simply want to share in a more personal way.

Each event is shaped around the people who take part in it, keeping the same calm, welcoming atmosphere that defines OM Taste. Whether hosted in our space or in a location of your choice, the focus remains on creating a simple, genuine experience built around food, culture, and being together.

Private functions are available on request and can be adapted to different groups and occasions.

OM Taste collaborates with Outback Beds Tours to offer small cultural experiences in both Australia and Italy. These tours bring together food, language, and local traditions, creating opportunities to explore different regions through simple, authentic moments.

Upcoming itineraries include destinations in Australia as well as Italy, with experiences that may involve cooking, learning, and discovering everyday life in places such as the Veneto region or Sicily. Each tour is designed for small groups and focuses on genuine, relaxed ways of connecting with local culture.
